Black cardamom popularly known as Badi elaichi or Kali elaichi is used in many signature dishes in many cuisines. They are from dark brown to black in colour and is in the form of seed pods. It has a smokey flavour because of the way it is dried. It is the third most expensive spice after vanilla and saffron. The pods and the seeds both are used in cooking.It belongs to the Zingiberaceae (ginger) family. Black cardamom is usually found in mountainous region such as Southern China and Indian Himalayas. The outer skin is tough, wrinkly and is dried, the seeds inside the pod are also black.
There are two species of black cardamom and they are amomum subulatum and amomum tsao-ko. The amomum subulatum is used in Indian cuisine and is much smaller than amomum Tsao-ko which is used in Chinese cooking. It also has an African variety known as Aframomum which is found in Madagascar, Somalia and Cameroon and another form in West Africa known as Grains of Paradise, which has the same taste and appears widely in the Western market.
